NOT YOUR STANDARD BREAKFAST SANDWICH
Breakfast is a touchy subject for us… we aren’t generally big egg fans, but we also don’t always want sweets. We have been experimenting with different variations of breakfast sandwiches, and we have finally come to the perfect recipe!

INGREDIENTS:
4 English muffins
4 Medium sized eggs
1 Avocado
1 Bag of pre-washed spinach
1 pack of bacon (we prefer to use turkey)
1 Tbsp. chipotle powder
2 Tbsp. lemon
2 Tbsp. chili flakes
2 Tbsp. pepper
A pinch of salt
2 Tbsp. parmesan
INSTRUCTIONS:
1. Take out a nonstick pan* and put on a medium heat and place spinach in pan to wilt
2. Take out another nonstick pan and put over a medium heat
3. In a bowl crack 1 egg. Make sure there is no shell in the bowl. Once you finish poor egg into heated pan, try to not crack the yolk
4. Heat griddle or griddle pan and put bacon in pan
5. In a bowl combine the avocado, chipotle, lemon, ½ tbsp. pepper, 1 tbsp. chili flakes, and salt. Mix until you create a paste-like consistency
6. By this point the spinach should have wilted, and shrunk in size. Take spinach out of pan and squeeze out as much water as possible. You can use a spoon to do this because the liquid will be very hot
7. Once liquid is out, place spinach back in the pan, and add 1 tbsp. chili flakes, 1 ½ tbsp. pepper, and 2 tbsp. parmesan
8. Flip the bacon
9. Check on your egg. At this point the first egg should be done “frying”. You are looking for the egg to lift easily, without any push-back when you try to lift it out of the pan
10. Once egg is ready, repeat the same process for the other three eggs
11. Once parmesan is melted, take spinach out of pan and set aside
12. Once crisp, take bacon out of the pan
13. Cut open English muffins and lightly toast
14. Spread avocado mixture on one side of English muffin
15. On other side of English muffin spread spinach
16. place egg on the side of the English muffin with the avocado and then place desired amount of bacon on top and close the sandwich

*If you don’t have nonstick just use a normal pan and spray cooking spray/ butter/ olive oil to coat the pan
