When it comes to fish, we like it battered. The crisper and more golden, the better. This is a great recipe to pull out when you are looking to impress your guests, or just craving a big crunch. This is a foolproof recipe! Feel free to modify, depending on your spice preference.

Serves: 8

Cooking Time: Up to 12 min.

Total Time: 35 min.

INGREDIENTS:

2 lbs. skinless halibut or cod

1 cup all purpose flour

1 cup rice flour

1 1/2 teaspoons kosher salt

2 1/2 tsp pepper

1tsp chipotle powder

1/2 tsp paprika

1 pinch cayenne

8 cups vegetable oil

2 cups sparkling water

INSTRUCTIONS:

1.     If you aren’t able to get your fish pre-cut into 1’’ strips, cut it now

2.     In a bowl, whisk together 3/4 tsp salt, 2 tsp pepper, chiptole powder, paprika

3.     Slowly mix in both cups of sparkling water, the remainder of your salt, pepper and cayenne in a bowl. Keep mixing until you reach a smooth, lump-free consistency. You want the batter to be runny, but not watery- similar to a crepe batter

4.     Take a large pot and fill it with vegetable oil. The oil should be about 2’’ high

5.     Use a thermometer to measure when the oil gets to 350 degrees

6.     Coat the fish in the batter, letting excess batter drip off

7.     Once oil is at 350 add about 6 pieces of the fish into the pot (if you have a small pot, put in less, you want to avoid the fish being overcrowded and sticking). Don’t just drop the fish in, place it to avoid any oil hitting you

8.     Use a slotted spoon to turn the fish occasionally

9.     Wait until the batter puffs, and you achieve a golden brown color

10. Transfer to wire rack and let excess oil drip off. Add additional salt if you prefer a saltier taste.

11. Serve with lemon wedges
