THE BEST BAKED CHICKEN FINGERS…. LIKE EVER

This is a game changing crispy chicken finger recipe! For a chicken finger to pass my test of approval, it must be crunchy on the outside, juicy on the inside, and the crust cannot fall apart after the first bite.
Getting a baked chicken finger to taste as good as a deep fried one is difficult, but I can honestly say that these are the BEST chicken fingers I have ever had!
INGREDIENTS
Chicken:
1.5lbs chicken breast cut into 1.5cm strips
Olive Oil Spray
Batter:
1 egg
2 tbsp non-fat plain Greek yogurt
2 tbsp Dijon mustard
1 tbsp flour
½ tsp salt
½ tsp ground pepper
Crust:
2 cups panko breadcrumbs
Olive Oil Spray
Optional (feel free to use any or all):
¼ cup of sesame seeds
¼ cup of dried parsley (can really use any herb you like)
1 tsp. of salt
1 tsp. of ground pepper
1.tsp of cayenne
INSTRUCTIONS:
1. Begin by preheating your oven to 400F
2. Mix all of the ingredients for the crust together on a baking tray, lightly coat them in the Olive Oil Spray, and quickly toast them in the oven until they are golden brown (3-4 min)
3. Combine all of the batter ingredients together in one bowl and whisk until mixture is combined and smooth
4. Place your chicken strips into the batter and make sure they are completely covered
5. Take chicken strips, one by one, and dip them into the crust, making sure to coat them completely and evenly and then place breaded strips on a parchment-lined baking sheet without having them touch
6. Once you have breaded all of the strips and placed them on the sheet (you will probably need two sheets), give them a light spray of the olive oil and bake for 20 minutes
7. Remove chicken fingers from oven and serve!
The chicken fingers will be golden and crispy on the outside and hot and juicy on the inside! I don’t find that they need any sort of dipping sauce, but Aliza likes to make her own “special sauce” where she mixes 1 tbsp of honey mustard with 1 tbsp of Frank’s Red Hot!
